Where did this month go?! It seems to be flying by and I can't believe Brett and I are coming up on 3 months in China! While in onesense I feel like we've been here for a long time (ahem, already missing family), another part of me is fully aware of how much adjusting we have yet to do and cultural aspectswe still need to learn. But as they say in China, "Slowly, slowly!"
With the end of the month approaching that also means that it's time for another Recipe Redux challenge. This is only my second timeparticipating in the Recipe Redux monthly roundup, but I already am in love with group. It's so fun for me to have some outside guidance for one recipe each month. It causes me to think outside of the box and get creative. Last week we were challenged to come up with a "freezer meal" and I created these Vegan Banana Ice Cream Sandwiches,which are unbelievably healthy and store wonderfully in the freezer.

A Nutty Nut Day
We had to take advantage of the fact that National Nut Day (October 22nd) falls on one of our ReDux monthly theme post days – so we can all go nuts! Share a healthy nut-filled recipe: Think whole nuts, chopped nuts, ground nuts, nut butter and/or nut flour. And Happy Nut Day!
I was excited to see this month's challenge, because I have a new-found love for cashew butter. Guys, that stuff is like fairy dust. It makes any sweet recipe I add it tothat much richer, sweeter, creamier...just better. I've been making energy bites using cashew butter recently and everyone I serve them to loves them and asks how I madethem. (The secret is the cashew butter, y'all.) Since I still don't have an oven, I knew I wanted to create a no-bake dessert using cashew butter and after three tries, these No-Bake Cashew Butter Chocolate Oatmeal Cookies were deemed WINNERS!

As you can see, these No-Bake Cashew Butter Chocolate Oatmeal Cookies look just like the classic no-bake cookies, except these lil' guys are sans butter, milk, and white sugar. Instead we're using coconut oil, non-dairy milk and a mix of coconut sugar and maple syrup. Oh yeah. Thenwhen you add in magical cashew butter you get an amazingly chewy, rich cookie that leaves you feeling so happyand satisfied.
These are simply delicious.
No-bake cookies are nostalgic for me. I grew up eating them and they were a go-to recipe to make in college whenever I had to bring a dessert to a party.Even right out of college I had a co-workerwho would always serve no-bake cookies for dessert whenever she invited people over for dinner. I always looked forward to eating at her house, and at one point I even deemed no-bake cookies my favorite dessert. That's why I'm so in LOVE with these No-Bake Cashew Butter Chocolate Oatmeal Cookies. They takeme back to happy times in my life, but they also leave my belly feeling satisfied and happy. If I had a classic no-bake cookie now, I'm almost positivemy stomach would hurt and I would have a headache from all the sugar. Not with these cookies though. They give me all the no-bake textures and richness without dairy, gluten and processed sugar. Win!

Ingredients
- 3 tablespoons coconut oil
- ¼ cup coconut sugar
- 2 tablespoons maple syrup
- 2 tablespoons non-dairy milk
- 1 ½ tablespoons cacao powder
- ⅓ cup cashew butter
- 1 cup quick oats
Instructions
Heat coconut oil, coconut sugar, maple syrup, non-dairy milk and cacao powder in a sauce pan until boiling.
Turn off heat and stir in cashew butter until it is completely incorporated.
Stir in quick oats and mix until combined. Drop by rounded spoonfuls (about 2 tablespoons worth) onto parchment paper or a silicon baking mat.
Place in the fridge until hardened, about 1 hour.
Notes
Store in an air-tight container for up to a week.

I've had great success with gluten free rolled oats. I add less for it to be more chocolatey and more for it to be more oat-y! 🙂 This is my go-to recipe for no bakes, as I had to give up peanut butter! (I even recently doubled it, then realized I didn't even have 1 cup of rolled oats, so I just tossed them in, put it in molds and it was like a fudge!)Reply

Hi Faith,
Thanks so much for sharing this recipe! I want to try it but I think I need to omit the coconut oil because I live in Singapore and the weather here is so hot that the cookies probably would not stay together for 5 minutes outside the fridge!Any idea on a substitute I could use for the coconut oil?

Hey Marie! So nice to meet you. How cool you live in Singapore...we're practically neighbors:) Sadly, I'm not sure what you could use to substitute the coconut oil. It's what helps harden and hold the cookies together. I'd recommend just keeping them in the fridge until just before serving and you'll be great! If you really can't use coconut oil, maybe try more cashew butter? I hope they work out for you!

Hi, can I use regular Quaker rolled oats if I don't have quick cook?

Hey Leena! I would think so , but you might need a smaller amount (maybe 3/4 cup to start) and they may not be as soft since quick oats are a little softer than rolled oats. But I'd definitely still give it a go! Let me know if they work for you!

I've somehow never actually had the classic no-bake cookies but I've seen recipes for them floating around on Pinterest and the blog world before. So, I didn't grow up with them, but I've always wanted to try making them and I'll definitely be sure to use your recipe when I do!
I also haven't tried cashew butter yet but I always see it at Trader Joe's and have wondered what it's like...cashews seem to be the new craze with cashew butter and cashew milk becoming popular recently!

Liv. You need to make these then!! First for the no-bake cookie experience and secondly because you need to go back to Trader Joes and buy their cashew butter!! You're missin' out;) but seriously, TJs cashew butter was my favorite of all the ones I bought in the states!
